How to Identify Pure Desi Ghee in Pakistan | Arabian Farms

How Do You Know If Desi Ghee Is Actually Pure?

Walk into almost any Pakistani grocery store or browse an online food shop and you'll see the same words again and again:

Pure.

Khalis.

Asli.

Traditional.

Bilona.

But when you're standing in your kitchen with a jar of ghee in your hand, the real question is much simpler:

How can I know what I'm actually buying?

That's a reasonable question.

Desi ghee is a relatively concentrated and valuable dairy product, and adulteration is a recognized food-quality concern. In fact, the Punjab Food Authority specifically lists the detection of adulterants in desi ghee—including palm oil, mineral oil, artificial colours and other substances—among its research and testing activities.

But there is also a problem with much of the advice circulating online.

“Put it in the fridge.”

“Put it in your palm.”

“Check the colour.”

“If it smells strong, it's pure.”

These observations can be useful clues.

They are not a laboratory certificate.

So let's separate the two.

This guide explains what you can realistically evaluate at home—and what requires proper laboratory testing.


First: What Does “Desi Ghee” Actually Mean?

Before discussing purity, we need to establish what the product is supposed to be.

Punjab's Pure Food Regulations define Desi Ghee as a product obtained exclusively from milk, cream or butter through processes that substantially remove water and non-fat solids. The regulations also specify that it should be free from added colour, flavour and other additives and establish compositional and quality parameters.

But none of these tests can establish the complete chemical composition of a product.

Laboratory analysis

So if someone tells you:

“This one home test proves your ghee is 100% pure.”

be cautious.

Even competing Pakistani guides that recommend several home tests acknowledge that home testing cannot provide absolute confirmation.


7 Practical Ways to Evaluate Desi Ghee at Home

These aren't presented as “magic purity tests.”

Think of them as consumer checks.

If several characteristics seem unusual, that's a reason to investigate the product further.


1. Observe the Ghee at Room Temperature

Start with the simplest test:

Look at it.

Don't immediately judge whether the ghee is “good” because it is yellow, white, smooth or grainy.

Natural ghee can vary in:

  • colour
  • firmness
  • grain structure
  • appearance

depending on factors including milk source and temperature.

2. Smell the Ghee

What are you looking for?

Observe how quickly it softens and melts.

What does this tell you?

“Melts in my palm = laboratory-proven pure.”

5. Gently Heat a Small Amount

A small amount of ghee can also be observed while gently heated.

Watch:

  • how it melts
  • its clarity
  • aroma
  • behaviour during heating

A properly made ghee should develop its characteristic aroma when warmed.

But don't deliberately burn it.

Burning any fat doesn't tell you much about whether it was pure before you burned it.

6. The Refrigeration Test — Useful, But Often Misinterpreted

Take a small amount of ghee and cool it.

People often say:

“Pure ghee becomes grainy.”

or:

“Fake ghee stays smooth.”

The reality is more complicated.

Ghee is a fat mixture, and its physical structure changes with temperature.

Different milk sources, processing conditions and fat composition can influence crystallization and texture.

So:

Grainy does not automatically mean pure.

Smooth does not automatically mean adulterated.

The better question is:
